Cacao powder is a versatile and nutrient-rich ingredient that has used since even the age of the Olmecs. Derived from the seeds of the cacao tree (Theobroma cacao), it brings a deep, rich flavor to both sweet and savory dishes. Whether you’re a home baker, a smoothie lover, or a curious cook, cacao powder can elevate your recipes with its distinctive taste and numerous health benefits.
Let’s explore what cacao powder is, its health perks, and the best ways to use it in your kitchen.
What is Cacao Powder?
Cacao powder comes from fermented and lightly roasted cacao beans, which are then ground into a fine powder after the removal of most of the fat (cocoa butter). The powder that remains is what we commonly use in baking, drinks, and even savory recipes.
Now, you might have heard the terms “cacao” and “cocoa” being used somewhat interchangeably. Traditionally, cacao refers to the raw, unprocessed version of the bean, while cocoa refers to the more processed form. Here at The Cocoa Circle, we offer both Dutch processed cocoa powder and raw cacao powder.
Our raw cacao powder is earthy, slightly bitter, and gently roasted. Some cocoa producers make cacao powder that isn't roasted to preserve as much of the raw flavour of the bean and the antioxidant content as possible. We choose to lightly roast our beans to get rid of any contaminants that they may have picked up during the fermentation and drying process, and to get a more rounded, mellow flavour. The beans are roasted at a much lower temperature than they are for cocoa powder, preserving that rich flavour and keeping the antioxidant benefit high.
The Health Benefits of Raw Cacao Powder
Beyond its delicious flavor, raw cacao powder packs an impressive nutritional punch. Here are some of its key health benefits:
- Rich in Antioxidants: Cacao is known for its high levels of flavonoids, or powerful antioxidants that help fight inflammation, reduce blood pressure, and improve circulation.
- Mood Booster: Raw cacao powder may stimulate the production of serotonin, the feel-good hormone, which can help reduce stress and boost your mood. Theobromine, another compound found in cacao, offers a mild energy lift without the jitters that come with caffeine.
- Heart Health: Regular consumption of raw cacao has been linked to improved cardiovascular health, thanks to its ability to lower cholesterol levels and reduce inflammation in the arteries.
- Nutrient Dense: Raw cacao powder is an excellent source of magnesium, iron, and calcium, making it a great addition to a balanced diet.

The Best Ways to Use Raw Cacao Powder
There’s no shortage of ways to incorporate raw cacao powder into your cooking. From sweet desserts, to wholesome breakfasts, and even savory dishes, cacao is incredibly versatile. Here are a few ideas to inspire you:
1. Baked Treats
Raw cacao powder is a staple for any home baker looking to add intensity, richness, or a health kick to their favourite bakes. It's great in everything, from classic chocolate cakes, to cookies, to smoothies. Its deep, earthy flavor adds a richness to baked goods that’s hard to beat. Try using it in your next batch of brownies or as a dusting over homemade truffles for an extra touch of decadence.
2. Cacao in Smoothies and Shakes
Raw cacao powder can also elevate your morning smoothie or post-workout shake. Blend it with frozen bananas, a spoonful of almond butter, and plant-based milk for a creamy, chocolatey smoothie that tastes indulgent but is packed with nutrients. Add in some oats or chia seeds for an extra boost of fiber and protein, and you've got an easy, nutritious breakfast to kick of your day. 3. Homemade Hot Chocolate
There’s nothing quite like a cozy mug of hot chocolate, especially when it’s made from raw cacao powder. Simply mix cacao with some hot water or your favorite milk (dairy or plant-based), a natural sweetener like honey or a splash of vanilla extract for a comforting, rich drink that’s perfect for cold days.
4. Savory Dishes with Cacao
While cacao is most commonly associated with sweet treats, it also works beautifully in savory dishes. In Mexican cuisine, raw cacao is often used in mole sauces, which are a blend of chilies, spices, and cacao, giving the sauce a complex, earthy depth. Cacao and smoked paprika is an underrated pairing that goes perfectly with roasted chicken or vegetables. You can also try adding a dash of cacao powder to chili for a subtle, smoky flavor.
5. Energy Bites and No-Bake Treats
For a quick and healthy snack, raw cacao powder is perfect in no-bake recipes like energy bites. Mix it with oats, dates, nut butter, and seeds to create small, bite-sized treats that are packed with energy and nutrition. These are great to have on hand for a midday pick-me-up or a post-workout snack.
6. Sprinkling Over Breakfast Bowls
If you enjoy oatmeal, yogurt, or smoothie bowls for breakfast, raw cacao powder can add a delicious kick of chocolate. Sprinkle a little over your bowl to add some extra tastiness and nutrition to your morning meals. Not sure where to start? Raw cacao pairs wonderfully with fruits like bananas and berries, oats, and yogurt.
Choosing Quality Raw Cacao Powder

When it comes to raw cacao powder, quality matters. Look for products that are sustainably sourced and minimally processed to retain as many nutrients as possible. When getting raw cacao powder, check the ingredient list to make sure there aren't any sugars or additives included. You want cacao powder only, nothing more. Our raw cacao powder is made of 100% Venezuelan Trinitario beans which are gently roasted, so you can enjoy the true depth and richness of raw cacao.
Why Sustainability Matters
One of the most important aspects of raw cacao powder is its connection to the farmers who grow the beans. At The Cocoa Circle, we are passionate about working with the communities that cultivate this simply, yet incredible bean.
The reality is, cocoa farmers work tirelessly to grow cacao, but often see only a small fraction of the profits made in the global chocolate industry. And we don't think that's fair. That's why a portion of every sale goes back to the farmers in the form of our microprojects, ensuring that our profits go back to supporting the people who make chocolate possible. It’s our way of creating a positive impact while delivering high-quality cocoa to chocolate lovers like you.
