Where’s it from?

Brigadeiros were born in Rio de Janeiro in the 1940s, during a time when ingredients were scarce and home cooks had to get creative. They were sold to support presidential candidate Brigadier Eduardo Gomes, and while he did not win the election, the sweets took his name and became a national icon.

Follow these steps to create your masterpiece

Ingredients

1 can (400 ml) sweetened condensed milk
2 tbsp alkalised cocoa powder
2 tbsp unsalted butter
Chocolate sprinkles, for coating
Shredded coconut, optional, for coating

Method

Prepare the brigadeiro mixture


In a medium saucepan, combine the condensed milk, cocoa powder, and butter. Cook over medium-low heat, stirring constantly with a spatula or wooden spoon. Use slow figure-eight motions and scrape the bottom to prevent burning.

Cook until thickened


Continue stirring for 10 to 15 minutes, until the mixture darkens, becomes glossy, and starts pulling away from the sides of the pan. It should have a thick, fudge-like consistency.

Remove from the heat and let cool for 5 to 10 minutes. To check readiness, tilt the pan. If the mixture slides as one piece and briefly reveals the bottom, it has reached the ponto certo, the perfect point.

Form the brigadeiros


Scoop tablespoon-sized portions and roll them between your palms until smooth. Place on a parchment-lined tray.

Coat


Roll each ball in chocolate sprinkles or shredded coconut, pressing gently so the coating sticks.

Chill and serve


Refrigerate for at least 30 minutes to firm up. Serve on a platter or in small paper cups. Store leftovers in an airtight container in the fridge for up to one week.
