Storing chocolate in the fridge is generally not recommended unless absolutely necessary, as it can affect the texture and flavor of the chocolate. The cold temperature of the fridge can cause condensation to form on the chocolate’s surface when it’s taken out, which can lead to sugar bloom or fat bloom.

Sugar bloom happens when moisture causes the sugar in the chocolate to crystallize on the surface, while fat bloom occurs when the cocoa butter rises to the surface and crystallizes.

However, if you live in a hot and humid climate and the room temperature exceeds 21°C, storing chocolate in the fridge can help prevent it from melting and losing its shape. Above 25°C it is necessary to cool the chocolate off, otherwise the chocolate will get white blooming spots and eventually melt.

If you do decide to refrigerate chocolate, make sure to wrap it tightly in plastic wrap or place it in an airtight container to protect it from absorbing odors from other foods. Before consuming, allow the chocolate to come to room temperature gradually to avoid condensation and blooming.
