Instructions
-
Make the raspberry chia layer
Place the raspberries, maple syrup, and lemon juice in a small saucepan. Cook over medium heat while smashing the raspberries with the back of a wooden spoon. Once you have a sauce-like consistency, remove from heat and mix in the chia seeds. Set aside and let cool completely. -
Make the Coconut Layer
Add all the ingredients for the coconut layer to a food processor and blend until the mixture starts to come together. Press the mixture into a silicone mold and top with the cooled raspberry chia mixture. Place in the freezer for a few hours until firm enough to cut into bars or squares. -
Coat with Dark Chocolate
Dip the bars into the melted dark chocolate, or place each bar on a fork and drizzle the chocolate over and down the sides to coat. Place the bars back in the freezer for 5-10 minutes until the chocolate is set.

Sweet, coconutty with a fruity raspberry twist. Perfect for a light, indulgent snack.
The coconut and raspberry combination was delightful! I’d add more dark chocolate next time to balance the sweetness.
