These delicious Raspberry Bounty Bars, featuring a sweet raspberry chia layer atop a rich coconut base, all coated in dark chocolate. Perfect as a refreshing and healthy treat!

Instructions

  1. Make the raspberry chia layer
    Place the raspberries, maple syrup, and lemon juice in a small saucepan. Cook over medium heat while smashing the raspberries with the back of a wooden spoon. Once you have a sauce-like consistency, remove from heat and mix in the chia seeds. Set aside and let cool completely.
  2. Make the Coconut Layer
    Add all the ingredients for the coconut layer to a food processor and blend until the mixture starts to come together. Press the mixture into a silicone mold and top with the cooled raspberry chia mixture. Place in the freezer for a few hours until firm enough to cut into bars or squares.
  3. Coat with Dark Chocolate
    Dip the bars into the melted dark chocolate, or place each bar on a fork and drizzle the chocolate over and down the sides to coat. Place the bars back in the freezer for 5-10 minutes until the chocolate is set.
