Moelleux au chocolat
A rich and gooey chocolate dessert with a soft center. Baked to perfection in just 9 minutes and best served warm with a scoop of vanilla ice cream.
Instructions
-
Preheat the oven
Preheat the oven to 180°C. Grease the aluminum baking tins or ramekins well with melted butter. -
Melt the Chocolate and Butter
In a heatproof bowl over a pan of hot (not boiling) water, melt the butter and chocolate together. -
Prepare the Egg Mixture
Separate 4 eggs; the whites are not needed for this recipe. In a separate bowl, beat the egg yolks, remaining whole eggs, and sugar with a mixer until very fluffy and doubled in volume. -
Combine Mixtures
Gently fold the chocolate-butter mixture into the egg mixture. Fold in the flour as lightly as possible. -
Divide and Bake
Divide the batter among the baking tins. Bake the moelleux in the oven for about 9 minutes. -
Serve
Transfer the moelleux to plates and serve as desired. We suggest adding a scoop of vanilla ice cream.
