Instructions

  1. Preheat the oven
    Preheat the oven to 180°C. Grease the aluminum baking tins or ramekins well with melted butter.
  2. Melt the Chocolate and Butter
    In a heatproof bowl over a pan of hot (not boiling) water, melt the butter and chocolate together.
  3. Prepare the Egg Mixture
    Separate 4 eggs; the whites are not needed for this recipe. In a separate bowl, beat the egg yolks, remaining whole eggs, and sugar with a mixer until very fluffy and doubled in volume.
  4. Combine Mixtures
    Gently fold the chocolate-butter mixture into the egg mixture. Fold in the flour as lightly as possible.
  5. Divide and Bake
    Divide the batter among the baking tins. Bake the moelleux in the oven for about 9 minutes.
  6. Serve
    Transfer the moelleux to plates and serve as desired. We suggest adding a scoop of vanilla ice cream.
