Preparation
Preheat oven to 150°C. Line a baking sheet with parchment paper. -
Mix the Ingredients
In a medium bowl, whisk together coconut, sugar, cocoa, flour, and salt. In a separate bowl, whisk together egg white, corn syrup, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until well combined. Fold in the chopped macadamia nuts. -
Shaping
Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving 1 inch of space between each macaroon. Shape each scoop into a ball and then flatten slightly into a disk shape. -
Baking
Bake for 18-20 minutes or until the tops are lightly golden brown. Remove from the oven and let cool on the baking sheet for 5 minutes. -
Chocolate Dipping
Dip the cooled macaroons into the melted chocolate, using a fork to fully coat. Place the dipped macaroons on a piece of parchment paper or a silicone mat. -
Decorating and Cooling
Place a nut on top of the macaron for decoration. Let the chocolate set at room temperature for 30 minutes.
