  1. Preparation
    Preheat oven to 150°C. Line a baking sheet with parchment paper.
  2. Mix the Ingredients
    In a medium bowl, whisk together coconut, sugar, cocoa, flour, and salt. In a separate bowl, whisk together egg white, corn syrup, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until well combined. Fold in the chopped macadamia nuts.
  3. Shaping
    Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving 1 inch of space between each macaroon. Shape each scoop into a ball and then flatten slightly into a disk shape.
  4. Baking
    Bake for 18-20 minutes or until the tops are lightly golden brown. Remove from the oven and let cool on the baking sheet for 5 minutes.
  5. Chocolate Dipping
    Dip the cooled macaroons into the melted chocolate, using a fork to fully coat. Place the dipped macaroons on a piece of parchment paper or a silicone mat.
  6. Decorating and Cooling
    Place a nut on top of the macaron for decoration. Let the chocolate set at room temperature for 30 minutes.
