Made with ethically sourced cocoa, these Alfajores feature a rich chocolate cookie filled with creamy dulce de leche. Topped with a sprinkle of coconut, they are a decadent way to enjoy cocoa while supporting farmers. Perfect for sharing or enjoying alone!
Ingredients
175g butter (room temperature)
100g fine sugar
zest of lime
1tsp vanilla paste
1/4tsp salt
2 egg yolks (room temperature)
30g cocoa powder
170g flour
150g corn flour
1 1/2tsp baking powder
1can dolce de leche
grated coconut

Prepare Dulce de LecheSubmerge a can of condensed milk in a pot of water and boil for 3 hours. Ensure the can remain fully submerged at all times. Cool completely before use.

Make the DoughBeat butter, sugar, lime zest, vanilla, and salt until creamy.
Mix in the egg yolks.
Add cocoa powder, flour, corn flour, and baking powder. Knead into a cohesive dough, wrap in plastic, and chill for at least 1 hour.

Roll and Cut the CookiesPreheat your oven to 175°C. Line baking trays with parchment paper.
Roll out the dough on a floured surface to 4–5 mm thickness. Work with small portions to avoid tearing.
Cut out rounds (4–5 cm in diameter) and place them on the prepared tray.

BakeBake for 12 minutes until the edges are light golden brown. Cool completely on a wire rack.

Fill with the dulce de lechePipe a dollop of dulce de leche onto half of the cookies.

Assemble the AlfajoresSandwich them with the remaining cookies. Roll the sides in grated coconut for the perfect finish.
